Redefine Meat Burger with an avocado-lemon spread and cheddar sauce.

Preparation

  1. Peel the avocado and remove the pit.
  2. Place the avocado together with the lemon juice in a bowl and add the lemon zest and paste.
  3. Puree into a creamy spread.
  4. Add salt and pepper to taste.

  1. Heat the oil over medium heat in a medium-sized pan.
  2. Once hot, increase the heat and add the flour.
  3. Cook, stirring constantly, until the flour is cooked and starts to stick to the bottom of the pan.
  4. Slowly whisk in the cashew milk and keep stirring as it comes to a boil.
  5. Add the grated (vegan) cheddar cheese and cook, stirring constantly, until a smooth sauce forms.
  6. Remove the sauce from the heat and cover to keep it warm.

  1. Put both types of flour, sourdough starter, sugar, and yeast in the bowl of a stand mixer.
  2. Add the water and knead for about 2 minutes until the dough forms a ball.
  3. Add the salt and knead the dough for another 10 minutes until soft and smooth.
  4. Place the dough in a - lightly oiled - bowl.
  5. Cover with a towel and let the dough rise in a warm place until doubled in volume.
  6. Punch down the dough after rising and divide it into balls of 120 grams each.
  7. Smooth each ball by rolling it on the work surface with the cupped palm of your hand.
  8. Place the rolls on a baking sheet lined with baking paper and cover with a towel.
  9. Let rise again for 45 minutes.
  10. Brush each roll with water and sprinkle with sunflower seeds.
  11. Bake at 200°C for 25 minutes or until the rolls are golden brown.
  12. Remove the rolls from the oven and let cool on a rack.

  1. Heat a grill pan or grill to medium/high heat and cook the burger for 4.5 minutes on each side.
  2. Cut the bun in half and place the bottom half on a plate.
  3. Spread with the avocado-lemon spread and place the burger on top.
  4. Spoon a generous amount of cheddar sauce onto the burger and cover with the other half of the bun.
  5. Optionally garnish the burger with extra toppings. For example, try a mix of edible flowers and various sprouts.
