Preparation

  1. Mix all ingredients in a small bowl.
  2. Taste and season with salt and pepper.
  3. Spoon the sauce into a squeeze bottle and set aside until use.

  1. Finely chop the onions and mix them in a small bowl with the sumac and vinegar.
  2. Taste and season with salt and pepper.
  3. Set aside for later. The sumac onions can be prepared in advance as long as they are kept chilled.

  1. Peel and deseed the tomatoes and cut them into 6 pieces.
  2. Place the tomato pieces on an ovenproof dish or surface.
  3. Use a torch to roast/brown the tomatoes, but do not burn them.

  1. Knead all ingredients for 10 minutes on low speed in a stand mixer with a dough hook.
  2. Place the dough in a clean, dry bowl and cover with a towel. Let the dough rise for one hour.
  3. Cut the dough into four pieces and shape each into a ball.
  4. Let the dough balls rest, covered, for 10 minutes on a lightly floured surface.
  5. Roll each ball into a circle 3 millimeters thick.
  6. Heat a skillet over high heat until the pan is smoking.
  7. Bake the pita breads for one minute per side in the blazing hot pan.
  8. Remove the pita breads from the pan and cover until use.

  1. Grill the kebabs over medium heat for 4.5 minutes on each side.
  2. Place the pita breads on a serving platter and spread with a generous amount of tahini-yogurt sauce.
  3. Place the grilled kebab skewers on top.
  4. Garnish with the sumac onions and roasted tomatoes.
