Preparation

  1. Sear the roulade all around in clarified butter and add salt and pepper during searing.
  2. Place the roulade in an oven dish and put it in a preheated oven at 160°C.
  3. Cook until the roulade reaches a core temperature of 52-54°C.
  4. While cooking, baste regularly with the cooking juices to keep the roulade deliciously juicy and tender.
