Soy foam

A savory foam to surprise your guest.

Ingredients

Chicken broth
Lemongrass
Ginger
2Soy sauce
6glecite (Texturas)

Preparation

  1. Take chicken stock and infuse with lemongrass and ginger over low heat. Strain the mixture.
  2. Take 2 dl of this stock and mix with 2 dl soy sauce. Add 6 grams lecite, blend with an immersion blender, and gently warm so the lecite dissolves well.
  3. Now make a foam by placing the immersion blender at an angle on the surface (a small plate on the blade of the immersion blender helps it foam better).
