Chicken broth
Lemongrass
Ginger
2Soy sauce
6glecite (Texturas)
Preparation
- Take chicken stock and infuse with lemongrass and ginger over low heat. Strain the mixture.
- Take 2 dl of this stock and mix with 2 dl soy sauce. Add 6 grams lecite, blend with an immersion blender, and gently warm so the lecite dissolves well.
- Now make a foam by placing the immersion blender at an angle on the surface (a small plate on the blade of the immersion blender helps it foam better).
