Soup of almond, macadamia and smoky paprika

A smooth and flavorful soup with a surprising combination of bread, nuts, and fresh accents.

Ingredients

50gwhite bread without crust
Chardonnay vinegar
1lpoultry or vegetable stock
75gmacadamia nuts
75gwhite almonds
smoky paprika cream
Cream 35%

Preparation

  1. Put the stock in a pan with the bread and nuts. Bring to a boil. Let simmer gently for at least 10 minutes. Purée (blender) the mixture and strain.
  2. Season with a little olive oil and some chardonnay vinegar. Add a small splash of cream.
  3. Serve the soup with some dollops of smoked paprika cream and fresh cress.
