The Sidecar is one of the most iconic classic cognac cocktails, first recorded in cocktail books around 1922. When cognac is replaced by calvados, it becomes an Apple Cart. Mixologist Thijn Koning gives his own twist to this timeless classic. Instead of cognac, he uses Calvados Pays d’Auge, chosen for its fresh, fruity notes that often pair beautifully with cinnamon and vanilla. By adding Bandoeng’22 – with warm spices such as cinnamon, clove, and cardamom – the cocktail gains a subtle applesauce-like character. A touch of St. Germain (elderflower) adds a floral and fruity depth, creating a beautifully balanced mix of spices, sweetness, and citrus. Perfect for sunny days.Ingredients
