Tortellone paprika & ricotta

Tortellone filled with bell pepper and ricotta, served in a rich piperade sauce. A delightful symphony of flavors and colors.

Ingredients

1units.itemswhite onion
2units.itemsGarlic cloves
800gSan Marzano tomato
280gRoasted pepper
Pepper and salt
Tortellone astica

Preparation

  1. Finely chop the onion and garlic clove.
  2. Rinse the bell pepper well and cut into equal pieces.
  3. Lightly sauté the onion and garlic in a pan with some olive oil.
  4. Add the bell pepper and fry briefly.
  5. Then add the tomatoes, including the juice from the can, to the mixture.
  6. Let everything simmer for 10 minutes over low heat.
  7. Puree and strain the sauce and season with salt and pepper.
  8. Cook the tortellone in boiling water for 3 minutes and serve with the warm sauce.
