0.2gSan Daniele ham
100gCauliflower cream with lemon pepper
90gAlmond croquettes
1units.itemsRomanesco
1/8 punnet Shiso purple

Preparation

  1. Remove the pork cheek from the packaging, roll in San Daniele ham with a sage leaf in between.
  2. Bake at 180ÀöC for 8 minutes.
  3. Put the cauliflower cream in a piping bag and place in a warming drawer.
  4. Fry the almond croquettes.
  5. Gently stew blanched romanesco florets with a knob of butter.
  6. Plate and garnish as desired.
