
Fresh sambal
Spicy homemade sambal made from red peppers, tamarind, ginger, and coriander. Ideal as a marinade or side dish, for example with spareribs.Ingredients
1tamarind (assem)
10red pointed peppers
1Red onion
1Light brown sugar
salt, fresh ginger, lemongrass, fresh coriander
4Garlic cloves
Preparation
- Clean the red peppers and 4 cloves of garlic. Finely chop the onion. Puree together into a paste.
- Sauté 1 small piece of fresh ginger with 1 stalk of lemongrass (sliced and bruised) in oil.
- Add the pepper paste and fry well (a few minutes).
- Add the brown sugar and 1 tablespoon tamarind, let dissolve.
- Remove the ginger and lemongrass before serving and stir in fresh coriander leaves (to taste) into the sambal.
