Fish bones

Fish bones made from orange and filled with panna cotta.

This recipe is part of Plateau de Fruits de desserts. An impressive combination of beautiful desserts and a surprising twist on the classic 'fruits de mer'.

Ingredients

Orange juice
Sweet tuille mix
Panna cotta
Fishbone mold

Preparation

  1. Prepare the tuille mix according to the recipe on the packaging, but replace the water with orange juice.
  2. Spread the mixture in the silicone mold.
  3. Bake at 170°C until crispy in the oven.
  4. Melt the panna cotta and let it cool down (to set).
  5. Whisk until airy and transfer to a piping bag.
  6. Pipe dots of the panna cotta between two crispy fish bones.
