Salmon Belle Vue
A classic for the holidays; this Belle Vue salmon is perfect as a sharing dish for long, enjoyable dining.Wine tip: The Jaffelin Saint-Véran (8127397). The vineyards of the Saint-Véran area surround the Medieval castle of Chasselas. A wine with a fruity, floral nose and a dry, lively taste with notes of almonds and white fruit. With age, a beautiful color evolution is noticeable and a scent of acacia blossom and honey emerges. A fresh balance and a powerful finish ensure a harmonious and well-structured wine.
Tip: Do not serve the salmon too cold to allow the flavor to come into its own.
