Bulles d’O is made from 50% Chardonnay grapes, 30% Chenin Blanc and 20% Pinot Noir.
The wine is vinified according to the “méthode traditionnelle” in a Brut style with a dosage of 8 g/L. After a delicate pressing and alcoholic fermentation, Crémant de Limoux must remain “sur latte” for at least 9 months to absorb the CO2 from the second fermentation. Bulles d’O, however, matures for 2 years to ensure optimal mousse formation and an exceptionally fine bubble.
Clear light yellow with a stable bubble. The nose is elegant with aromas of green apple, white fruit, spring flowers and honey. Well balanced and fresh on the palate, with a long, elegant finish. Excellent as an aperitif with fish or foie gras, but also good with a seafood platter, grilled white fish, asparagus risotto or poultry in sauce.
