The top of this washed-rind cheese is somewhat concave, as the cheese is not turned during ripening. The paste is very creamy and the flavor subtle. Langres has an AOP recognition (Appellation d'Origine Protégée). This means that this cheese may only be made from cow's milk from the departments of Côte d'Or, Haute-Marne, and the Vosges.
