Rebello ham is a dry-cured ham made exclusively from the heart of the ham, also known as cullata. This selection creates a compact ham with a distinctive teardrop shape. The meat is carefully produced from strictly selected Italian pigs and then air-dried for at least 14 months. This maturation process results in a ham with a tender texture, a slightly sweet taste, and a pronounced aroma. The finishing and long drying process ensure a balanced flavor development and a refined character.
