Bavette is a coarse but tender muscle with a full beef flavor and a characteristic long, flat shape. This cut of meat is located just above the flank of the cow and is known for its fine texture and pronounced taste. The marbling present provides extra juiciness and a tender mouthfeel. This beef bavette comes from grain-fed Black Angus cattle from Australia. The cattle graze for 26 months on vast plains and then spend at least 120 days in a feedlot, where they receive a carefully composed diet based mainly on grain, supplemented with grass and corn. This feeding pattern contributes to the fine marbling, tenderness and rich flavor of the meat. Bavette is particularly suitable for cooking to a medium-rare doneness.
