The base of this prawn croquette is a homemade stock made from prawn shells. The stock has a mild and full prawn flavour. The prawn croquette is generously filled with 40% Dutch prawns. For coating the croquettes, we use panko. This Japanese breadcrumb creates a thin and extra crispy crust. The inside is soft and creamy and flows slightly when you cut the croquette open.
