The base of this prawn croquette is a homemade bisque made from prawn shells. The bisque has a powerful and slightly spicy flavour. The prawn croquette is generously filled with 40% Dutch prawns. For breading the croquettes, we use panko. This Japanese breadcrumb creates a thin and extra crispy crust. The inside is soft and creamy and becomes slightly runny when you cut the croquette open.
