Pousse en Claire is an exclusive French oyster from Marennes-Oléron. After the regular cultivation, these oysters are refined for four to eight months in special clay basins, known as claires. In these basins, the oysters are kept at a very low density of a maximum of five per square meter, which contributes to even and controlled growth. This refinement method produces a full and firm oyster with a complex, earthy flavor. The flavor profile is further characterized by a pronounced merroir aroma, directly linked to the composition of the clay soils and the local water in the claire system. The grading 3-12 indicates the size of this selection and stands for consistent quality.
