These rare summer truffles come from Umbria in Italy. They are sought from May to September. They are slightly less sweet in taste and somewhat more robust in shape than the winter truffle, but more affordable. The winter truffles are available from mid-November to mid-March. The truffles grow on the roots of trees. Cavatori (Italian truffle hunters) search together with specially trained dogs for the 'black gold'. It is important that they are well ripe, as this brings out the best flavor. In the past, the 'hunt' was done with pigs, but they are used less and less because they also like to eat the truffles themselves. Shave or grate thin slices of the truffle over, for example, a pasta or risotto dish.
