Beet leaf no. 1

These edible leaves add a playful touch to dishes and amuse-bouches.With one mold you can make various sweet and savory flavors in all kinds of colors.

Ingredients

50gzusto sugar substitute
1gSalt
5gBeet powder
50gEgg white
50gButter
45gSifted flour

Preparation

  1. Mix the zusto with the sifted flour, beet powder, and salt.
  2. Heat the butter until light brown.
  3. Heat the egg white to 40°C.
  4. Mix everything well together and then let it cool.
  5. Spread the batter onto a baking mat using the stencil.
  6. Bake the leaves at 160°C for about 8 minutes.
  7. Immediately press between a leaf vein mold to create texture.
