The perfect 'butterfly' chicken from the Big Green Egg by Leonard Elenbaas

Ingredients

butterflied chicken
Lahtor spice mix
Sea salt
Oil

Preparation

Step 1

  1. Prepare the Big Green Egg as follows: 180°C, grill grate.
  2. Rub the chicken on both sides with a little oil and sprinkle with sea salt and lahtor spices.
  3. Grill the chicken for a total of 20 minutes on the skin side, but move it every 3 to 4 minutes until the skin is nicely colored and crispy.
  4. Then turn the chicken onto the meat side and repeat until the chicken has reached a core temperature of 72°C in the breast and thigh.
