Cannoli with dark chocolate ganache with Latte Macchiato crema

Cannoli with pure chocolate ganache and creamy Latte Macchiato cream, full and smooth in flavor with a subtle coffee note.

Ingredients

3Clear gelatin leaf sheets
400gUnsweetened whipping cream 35%
30gCocoa
240gDark chocolate callets 54.5%
50gBottega Latte Macchiato crema

15Cannoli (unfilled)

Preparation

  1. Soak the gelatin sheets in cold water.
  2. Heat the cream together with the liqueur.
  3. Dissolve the gelatin sheets in this.
  4. Pour the warm cream over the chocolate and cocoa powder and emulsify with a hand blender.
  5. Let cool and whip to soft peaks before use.

  1. Fill the cannoli with the cream.
  2. Dip both ends in the puffed rice.
  3. Sprinkle with decorative snow.
