Donut Malibu & dragonfruit bun

Donut bun filled with white chocolate-Malibu mousse, finished with dragon fruit powder, fresh pitahaya, coconut flakes, and edible flowers.

Ingredients

Berliner bun / donut bun
300gWhite chocolate
Roasted coconut chips
70gMalibu
600gCream
6gleaf gelatin
Fresh pitahaya
Dragon fruit powder
Fresh flower petals

Preparation

  1. Let the donut buns thaw and roll them in fine sugar.
  2. Soak the gelatin sheets in cold water.
  3. Heat the cream together with the Malibu.
  4. Dissolve the squeezed gelatin in the warm cream mixture.
  5. Pour the mixture over the white chocolate and mix until smooth.
  6. Let cool and then whip until light and airy in the machine with a whisk until it becomes a pipeable mousse.
  7. Fill the donut buns with this mousse using a piping bag and stainless steel nozzle.
  8. Pipe a dollop of mousse on top of the bun as well.
  9. Clean the fresh pitahaya and cut the flesh into small cubes.
  10. Dust the donut with dragon fruit powder.
  11. Garnish with cubes of pitahaya, toasted coconut chips, and fresh flower petals.
