Mango ganache

Ingredients

210gWhite chocolate callets
6gleaf gelatin
25ginvert sugar
mango ice cream
225gCream
225gMango puree
5gAgar
Cress
Exotic fruit crumble
crispy mango

Preparation

  • Heat the puree, cream, invert sugar, and agar.
  • Dissolve the soaked gelatin in it.
  • Pour this mixture over the chocolate callets, mix well, and pour out onto a tray.
  • Let it set in the refrigerator.
  • Cut strips of the chocolate and playfully place them on a plate.
  • Scoop some mango ice cream alongside.
  • Garnish with the crumble, cress, mango compote, and crispy mango.
