Preparation
- Remove the chipotle peppers from the sauce and rinse gently.
- Using a piping bag, fill the peppers with some cream cheese.
- Place them on foil in the refrigerator to firm up.
- Process the garlic croutons in the food processor until powdered.
- Beat a few eggs.
- Bread the stuffed peppers in flour, then egg, then the garlic crouton crumbs.
- Repeat this once more.
- Make sure the open end is well 'sealed' with breadcrumbs.
- Fry in oil until crispy.
- Serve with guacamole and lemon.
