Fried Pizza

Fried pizza is a delicious, crispy variation of the classic pizza.

Ingredients

24gOil
800gFlour
14gSalt
640gWater from the fridge
6gInstant yeast
Semola

Preparation

  1. Slowly mix the flour and yeast in the stand mixer.
  2. Gradually and slowly add the water.
  3. Increase the speed of the dough mixer and add the salt.
  4. Mix until the dough reaches about 22°C.
  5. Slowly add the olive oil.
  6. Mix the dough until it reaches about 24°C.
  7. Let the dough rest at room temperature for about 30 minutes.
  8. Portion the dough to the desired weight and shape into tight balls. Cover well and let rest overnight in the refrigerator.
  9. Remove the dough from the refrigerator and let it come to room temperature, covered, for at least 4 hours.
  10. Sprinkle the work surface with a little semola and shape the dough.
  11. Fry the dough at about 180°C for about 3 minutes.
  12. Drizzle the dough well with hot oil and turn occasionally so it cooks evenly.
