Grilled chicken with quesadillas and salsa
Delicious grilled chicken with BBQ spices.Served with quesadillas and avocado salsa. This recipe is for 4 people.Ingredients

390gChicken thigh fillet
2Avocados
4Tortilla wraps

Preparation
- Grate the orange peel of 1 orange and set aside. Squeeze the oranges. Mix 175 ml orange juice with 1 tablespoon Euroma Mexican style BBQ spices, pepper and optionally salt, and the olive oil.
- Place the chicken thigh fillet in a shallow dish and pour the marinade over it. Let stand covered for at least 30 minutes to allow the flavors to infuse. Meanwhile, light the barbecue.
- Remove the chicken from the marinade and grill over medium heat on the barbecue. Brush with the orange marinade every 3 minutes and turn regularly. Grill the chicken this way for about 20 minutes until cooked through.
- Meanwhile, top half of the tortillas with the cheese and sprinkle with 2 tablespoons Euroma Mexican style BBQ spices. Place the other half of the tortillas on top. Grill the quesadillas for 4 minutes until the cheese is melted and grill marks appear. Turn halfway through.
- Halve the avocado, remove the pit, and scoop the flesh from the skin. Cut the flesh into small cubes of about ½ cm. Slice the jalapeño into thin rings.
- Mix with the orange zest, 2 tablespoons orange juice, and the avocado to make a salsa.
- Mix the sour cream with half a tablespoon of the Euroma Mexican style BBQ spices, season with pepper and optionally salt.
- Cut the quesadillas into 6 wedges and place on a platter. Slice the chicken into strips and place the chicken in the center, and serve with the avocado and sour cream.
