
Marinated Pork Belly with Pineapple

Preparation
- Prepare a pork belly by removing the rind and any remaining bones.
- Cut the belly into pieces of about 400 g for each portion.
- Make the marinade by adding all the ingredients to a mixing bowl.
- Place the pieces in a baking dish, pour over the marinade, and coat well.
- Wrap with plastic wrap and refrigerate for 12 hours.
- The next day, preheat the oven to 180°C.
- Check that the pork belly pieces are well coated.
- Replace the plastic wrap with aluminum foil and bake for 1 hour (if making large pieces, increase the baking time accordingly).
- After an hour of roasting, remove the aluminum foil and turn the pieces over.
- Repeat this process 3 times, every 20 minutes.
- During the last 20 minutes, add the pineapple purée and the white stock.
- Remove from the oven and brown under the salamander until golden.
- Serve with butternut purée and the pineapple marinade.
