Preparation
- Mix the fresh cheese and the mango purée.
- Add salt and pepper.
- Rub the chicken breast with curry powder.
- Sear the chicken breast in a pan with a little butter over high heat, then cook over medium heat for 10 minutes.
- Salt again.
- Slice the chicken breast thinly.
- Fill the choux pastry with mango purée and the chicken strips.
- Sprinkle with a little curry powder.
