Oven-roasted baby potatoes in the skin with coppa, patatas bravas sauce and chives.Ingredients
15gChopped chives
1Banana shallot
Oil
Pepper and salt
1kgBaby potatoes in the skin
Provençal herbs
20Sliced coppa
3Garlic cloves
Patatas bravas
Preparation
- Wash the baby potatoes.
- Finely chop the garlic and shallot.
- Mix the potatoes with the garlic, Provençal herbs and oil.
- Roast the potatoes for about 20 minutes at 180°C until cooked.
- Skewer a slice of coppa like a rose on a toothpick.
- Place the potato on top and pipe a dollop of patatas bravas sauce on it.
- Cut the chives into fine rings and sprinkle them over the sauce.
