Ibérico rolls with nduja

A flavorful roulade of Ibérico and beef, enriched with nduja for extra spice.

Ingredients

Olive oil to taste
Iberico roulade with nduja filling
Thyme to taste

Preparation

  1. Cook the roulade sous-vide at 49°C.
  2. Brown the roulade all around in a pan and baste (spoon over with the cooking fat) until a core temperature of about 53°C is reached.
  3. Let the roulade rest for 5 minutes and serve with fresh thyme to taste.
