200mlAmarena cherries
200mlWater
200gSpicy gorgonzola
100mlBoiron cherry puree
5gKappa

Preparation
- Blend the mascarpone with the gorgonzola until smooth in the food processor.
- Fill the mold and freeze.
- Cut the brioche to the desired size so the frozen cheese fits on top.
- Heat the Toschi Amarena syrup, water, cherry puree, and kappa, and mix well so the kappa dissolves completely.
- Remove the cheese mixture from the mold, skewer with a satay stick, and dip into the jelly at about 80°C.
- Place the jellied cheese on a piece of cut-out brioche.
