Crunchy egg with various toppings

Fried crispy egg with various toppings, such as egg yolk cream or softly cooked egg yolk.

Ingredients

Eggs
Chives
Flour
Panko red curry

Egg yolk
Curry
Kewpie mayonnaise

Eggs
Sunflower oil
Soy
Sesame oil

Preparation

  1. Boil the eggs to the desired result.
  2. Rinse the eggs with cold water and peel them.
  3. Keep the eggs whole or halve them, saving the yolk.
  4. Bread the eggs and fry them.
  5. Serve with, for example, egg yolk cream or softly cooked egg yolk. See preparation step 2 or 3.
  6. Top with finely chopped chives.

  1. Boil the eggs.
  2. Save the yolk and mix it with the Kewpie mayonnaise.
  3. Add curry to taste.

  1. Cook the egg yolks in water with a sous vide stick or in a steamer (100% steam) at 64°C for about 45 minutes.
  2. Rinse the eggs with cold water and carefully crack them open.
  3. Rinse away the egg white and store the yolks on a mix of sunflower oil, soy sauce, and sesame.
  4. Fill the fried egg with the yolk and top with finely chopped chives.
