Preparation
- Mix the Silvia egg white powder with water according to the ratio on the package.
- Whip the mixture in a machine with a whisk until airy.
- Spread the airy mixture thinly on a silicone drying sheet.
- Grate fresh lemon zest over the surface.
- Dry the whole in a (drying) oven at 70°C until crispy and brittle.
- Place a cup of mango-passion fruit yogurt ice cream in the OneShot machine.
- Dispense as a soft serve into a bowl.
- Playfully stick the crispy meringue shards against the ice cream.
- Garnish with sliced fresh lemon balm leaves and finally sprinkle mango-passion fruit crunch over the whole.
