Panna cotta with red fruit and shaved ice

Sorbet with Boiron red currant puree with panna cotta and red fruit.

Ingredients

Strawberries
Blackberries
red currants
Panna cotta
Raspberries
Blueberries
Lemon balm
Merlot vinegar

400mlWater
150mlSugar syrup (1:1)
Ice shaver
100mlLemon juice
250mlred currant purée

Yogurt crunch

Preparation

  1. Melt the panna cotta and pour into glasses.
  2. Hold the glasses at an angle and place them in the fridge to set.
  3. Clean the fruit, quarter the strawberries, and remove the red currants from the stems.
  4. Mix in a little merlot vinegar with the fruit to taste.
  5. Cut the lemon balm into fine julienne and mix with the fruit.

  1. Mix the berry purée with the water, sugar syrup, and lemon juice.
  2. Freeze in plastic containers.

  1. Spoon the fruit next to the set panna cotta in the glass.
  2. Shave the ice with the coarse blade and spoon on top.
  3. Garnish with the yogurt crunch.
