Ube cheesecake & blueberry

Shaved ice is the trend. We also call it ‘snow in the summer’. In this recipe, we use Boiron blueberry puree.

Ingredients

60gFlour
50gSugar syrup (1:1)
225gBlueberry puree
5units.itemsEgg yolks (M)
3units.itemseggs (m)
225gUbe puree
200gSugar
700gCream cheese

250mlBlueberry puree
400mlWater
100mlLemon juice
Ice shaver
150mlSugar syrup (1:1)

pistachio crumble

Preparation

  1. Mix everything in the food processor.
  2. Pour into silicone molds, cover with foil, and steam at 82°C for 30 minutes.
  3. Let cool and freeze to be able to unmold.
  4. Let thaw before serving.

  1. Mix the blueberry puree, water, sugar syrup, and lemon juice well and freeze in cups.
  2. Shave ice from it using the fine blade.

  1. Place the cheesecake on a plate, scoop the shaved ice on top, and garnish with pistachio crumble.
