Bellini with peach

Shaved ice with Boiron peach puree, fresh peaches, limoncello and prosecco.

Ingredients

Fresh peaches
Peach purée
Prosecco
Limoncello

Ice shaver
Dried orange
Peach purée

Preparation

  1. Cut the peaches into brunoise.
  2. Mix this with a little peach purée.
  3. Chill the glasses and, before serving, pour a splash of limoncello over and then top up the glass with prosecco.

  1. Freeze in containers and then shave into shaved ice with the fine blade.
  2. Scoop this onto the peach in the glass and garnish with a dried slice of orange.
