Strawberry coupe with Chantilly cream

Shaved ice with Boiron strawberry puree, strawberries, and strawberry liqueur.

Ingredients

fresh strawberries
strawberry liqueur
Cream plus mascarpone
Strawberry puree
Lemon balm
Ice shaver

Preparation

  1. Clean the strawberries and cut into quarters.
  2. Marinate in a little strawberry liqueur.
  3. Whip the cream plus with a little sugar (to taste) until soft peaks form.
  4. Pour the strawberry puree into plastic containers and freeze.
  5. Cut the lemon balm into julienne strips.
  6. Scoop the marinated strawberries into an ice-cold bowl.
  7. Spoon some of the cream on top.
  8. Shave the ice with the fine blade and place on the strawberries.
  9. Garnish with the lemon balm.
