Tropical Caribbean

Shaved ice is the trend. We also call it ‘snow in the summer’. In this recipe, we use Boiron exotic fruit purée.

Ingredients

Ice shaver
400mlWater
250mlTropical fruit puree
150mlSugar syrup (1:1)
100mlLemon juice

Banana
Mango
Pineapple
Papaya
pitahaya

400mlWater
8gAgar
600mlBlue curacao

Condensed coconut milk
Coconut chips

Preparation

  1. Mix the purée with the water, sugar syrup, and lemon juice.
  2. Freeze in plastic containers.

  1. Clean the fruit and cut into brunoise.

  1. Mix the Blue Curaçao with the water and agar.
  2. While stirring, heat to 80°C.
  3. Let cool slightly, but keep it liquid.
  4. Spoon some fruit into glasses (reserve some).
  5. Pour the Blue Curaçao over and place in the fridge to set.

  1. Spoon some fruit onto the jelly, pour some condensed coconut milk over it.
  2. Shave the ice with the coarse blade and spoon onto the fruit.
  3. Garnish with the coconut chips.
