Preparation
- Peel the parsnips and slice them thinly on the mandoline.
- Save the peels to fry for a crispy garnish.
- In a pan, combine the heavy cream, milk, chopped garlic, thyme, salt, and pepper. Let it sit on low heat for 10 minutes so the flavors can blend well.
- Grease an oven dish with some butter.
- Place a layer of sliced parsnip in the oven dish, pour over part of the cream mixture, and sprinkle with cheese.
- Repeat until all ingredients are used up.
- Bake the gratin for 40 minutes at 160°C and then 10 minutes at 180°C for a nicely gratinated cheese layer.
