Preparation
- Slice the pears very thinly on a mandoline.
- Vacuum the pear slices and infuse with sushi vinegar.
- Pipe dots of spicy mango sauce on the carpaccio.
- Garnish with small pieces of gorgonzola, cinnamon cashews, mustard caviar, cress, and some honey.
