Fig carpaccio

The figs are crushed with the skin on and frozen between butcher's foil, perfect for mise-en-place.Next, fig wedges and buffalo mozzarella are wrapped in Parma ham and gratinated in the oven with honey. The carpaccio is finished with these fig-Parma ham parcels, balsamic, and a fresh salad of cresses.

Preparation

  1. Flatten the figs and freeze them between butcher's foil for later use.
  2. Place fig wedges on a baking tray, wrapped in Parma ham with buffalo mozzarella.
  3. Gratinate in the oven with a drizzle of honey.
  4. Top the flattened carpaccio with balsamic, one of the fig-Parma ham bundles, and a salad of cresses.
  5. Season with coarse sea salt.
