Preparation
- Flatten the figs and freeze them between butcher's foil for later use.
- Place fig wedges on a baking tray, wrapped in Parma ham with buffalo mozzarella.
- Gratinate in the oven with a drizzle of honey.
- Top the flattened carpaccio with balsamic, one of the fig-Parma ham bundles, and a salad of cresses.
- Season with coarse sea salt.
