Piccolini buffalo mozzarella with Parmesan and caramelized onion

Mozzarella balls with Parmesan cheese, oregano and garlic, served with a confit onion dip.

Ingredients

1mini bruschetta
Piccolini buffalo mozzarella
Egg white
Flour
Pepper and salt
caramelized onion
Parmesan cheese

Preparation

  1. Grind the bruschetta into a crumble using the food processor.

  1. Pat the buffalo mozzarella balls dry.
  2. Flour the buffalo mozzarella balls, dip them in the egg white, and coat them in the bruschetta.
  3. Dip the buffalo mozzarella balls again in the egg white and then in the crumble.
  4. Let them firm up in the refrigerator for a while.
  5. Fry the buffalo mozzarella balls at about 180°C for 2 minutes.
  6. After frying, salt the buffalo mozzarella balls and generously grate Parmesan cheese over them and mix well.

  1. Serve the Piccolini buffalo mozzarella with caramelized onion.
