
Leek mayonnaise
A creamy mayonnaise enriched with finely chopped leek for a subtle, savory flavor. Delicious as a dip or with grilled dishes.The green oils from Grønn are oils made just as the HANOS chefs would make them in the kitchen. Intense in flavor and deep green in color. You can find these Grønn oils in our vegetable department. Perfect, for example, for seasoning 'split dressings'.Ingredients
2Egg yolks
2Mustard
Pinch of salt
1Sushi vinegar or lemon juice
250mlLeek oil
Smoked eel cubes (optional)
Fresh tarragon (optional)
Small shallot (optional)
Preparation
- Place the egg yolks, mustard, sushi vinegar or lemon juice, and a pinch of salt in a blender.
- Blend the ingredients until smooth.
- Slowly add the leek oil while running the blender, until the mayonnaise thickens and all the oil is incorporated.
- Taste and season with extra salt or vinegar if needed.
- Optionally garnish the mayonnaise with, for example, smoked eel cubes, finely chopped shallot, and fresh tarragon.
- Serve the leek mayonnaise as a dip for vegetables, on sandwiches, or as a dressing for salads.
