Thai mussels

Thai mussels: delicious mussels in an aromatic sauce of coconut milk, lime, mint, and coriander. An exotic dish full of flavor!

The green oils from Grønn are oils just as the HANOS chefs would make them in the kitchen. Full of flavor and deep green in color. You can find these Grønn oils in our vegetable department. Perfect, for example, for flavoring 'split dressings'.

Ingredients

1kgJumbo mussels
1Onion
1Small chili pepper
4Fish sauce
4Coriander sprigs
1Lime (juice and zest)
4Mint sprigs
250gCoconut milk
50gButter
50gThai oil

Preparation

  1. Wash the mussels, chop the onion, and finely chop the chili pepper.
  2. Heat the Thai oil in a large pan and briefly sauté the mussels with the chopped onion and chili.
  3. Deglaze the mussels with the fish sauce and cover the pan with a lid. Then add the butter and steam the mussels until they have all opened.
  4. Drain the mussels and strain the jus to remove any grit.
  5. Bring the coconut milk to a boil in a separate pan and add the filtered jus.
  6. Reduce the mixture to about half.
  7. Pour the reduced coconut milk and jus over the mussels and garnish with sprigs of coriander and mint.
  8. Finally, add the lime zest and drizzle with some extra Thai oil for added flavor.
