
Red cabbage croquette
Croquette of, among other things, red cabbage, deep smoke, capers, ginger soy and Parmesan.Small bites complete your menu! With these relatively easy-to-prepare bites, you can endlessly vary. 500gRed cabbage
250gWater
20gDeep smoke intense
20gGinger soy
75gParmesan grated
106gCapers
200gBatter mix gluten-free
25gLeek oil

Preparation
- Blend the red cabbage with the water, deep smoke, sushi vinegar, and ginger soy.
- Place on the drip tray.
- Mix with the Parmesan cheese.
- Briefly fry the capers at approx. 160°C and mix with the red cabbage and Parmesan.
- Freeze the pulp in the desired shape.
- Make a batter from the batter, leek oil, and water.
- Dip the frozen red cabbage pulp in the batter mix and fry at 180°C until the desired color.
- Top the croquettes with a sauce of your choice, apple syrup onion, and fill them with the leek oil.
