Spanish Calamares

Ingredients

Charlotte potato
Vacuum bag
Oil (for confit)
Squid rings
Smoked paprika powder
Lemon zest
Lime mayonnaise

Preparation

  1. Peel the potato, cut into slices, and cut out in the desired shape.
  2. Place the potato in a vacuum bag with oil and smoked paprika powder.
  3. Vacuum seal and cook in the steamer (or with sous-vide stick) at 85ÀöC for about 1 hour.
  4. Cool down.
  5. Fry the calamari.
  6. Place a cube of potato on top of the calamari and sprinkle with paprika powder.
  7. Finish the potato with cress to taste, lime mayonnaise, and lemon zest.
