Sauerkraut mash with vegan sausage

Sauerkraut stamppot with a twist, we love it. The Vegan sausage is a delicious alternative to keep the dish completely plant-based.

This recipe is for about 4 people.

Ingredients

250gvegan beef sausage
1kgSauerkraut
2kgPotatoes
6units.itemsjuniper berries
1units.itemsbay leaf
vegetable oil or plant-based butter
Pepper
Salt
optional: splash of wine

Preparation

  1. Peel the potatoes and cut them into equal pieces. Slowly cook them in water with salt until done.
  2. Put the sauerkraut, juniper berries, and bay leaf in a pan with a splash of water or wine.
  3. Bring to a boil and let simmer gently. Remove the juniper berries and bay leaf once the sauerkraut is cooked.
  4. Mash the potatoes and mix in the sauerkraut. Season with pepper and salt.
  5. Brown the vegan sausage nicely in butter or plant-based oil and serve with the sauerkraut mash.
