Asparagus is one of the few true seasonal vegetables. The first asparagus is harvested at the end of February or the beginning of March, depending on the temperature. The traditional asparagus season runs from mid-April to June 24. When asparagus is grown underground and thus never sees sunlight, it remains white in color. This is why it is also nicknamed ‘white gold’. White asparagus has a delicate, slightly sweet flavor and is traditionally eaten with potatoes, a boiled egg, ham or smoked salmon, and a butter sauce.
