500gWhite asparagus
Cucumber
30gHoisin sauce
60gSpring onion
0.5gBlack pepper
Preparation
- Peel the white asparagus and cook them for 8–10 minutes until tender. Let them cool slightly.
- Mix the hoisin sauce, soy sauce, sesame oil and sugar into a sauce.
- Cut the asparagus into long, thin strips (like 'duck').
- Heat the pancakes in a steamer basket.
- Spread each pancake with the sauce.
- Place the asparagus, cucumber and spring onion on top.
- Roll up and serve immediately.
